Quick Risotto with Smoked Gouda

1 T. olive oil 1/4 c. onion, finely diced 1 c. Arborio rice, uncooked 1/4 c. dry white wine or chicken broth 1-3/4 c. chicken broth

1/2 c. Sun-Maid Goldens and Cherries or Cape Cod Cranberries 1/2 c. smoked Gouda cheese, shredded 1/4 c. shredded Parmesan cheese pepper to taste

 In a heavy medium saucepan, heat oil over medium heat. Sauté onion until soft, 2 to 3 minutes. Add rice; stir until well coated with oil. Add 1/4 cup wine or broth; simmer until liquid evaporates. Stir in 1-3/4 cups broth and bring to a simmer. Reduce heat; cover and cook for 18 to 20 minutes, until most of broth is absorbed. Remove pan from heat; stir in dried fruit, cheeses and pepper to taste. Let stand partially covered for 5 minutes. Serve hot.

My compliant of the day....

I have been searching for the Gum Crayola toothbrush 2 pack from Fry's at two different stores and they are both out and have been for some time.

These toothbrushes, for those of you who don't know, are 10/$10 right now and that makes them FREE with my coupon.  Well my area has a lot of "shelf-clearers" and it is very frustrating because although I coupon I do not clear the shelf (unless there are only 2 or 3 left to begin with).  Kids toothbrushes are not the ones that are typically on sale so I do not have a stock pile for them.  I just wish that people would be respectful enough to come back later and get more if they want but to give others a chance to get some too.  I know it is a petty thing to b*tch about but it is how I feel and I deal with this every week and think it is rude of those who think it is "okay" to clear shelves.....

Copy-Kids Review and Giveaway

Munchkin 2 and I had the opportunity to review Copy-Kids DVD.  Copy-Kids is a new video aimed at children ages 6 months to 5 years that encourages the eating, and enjoyment of fruits and vegetables.  The video features children not only eating 12 different fruits and veggies but loving them and showing their excitement which infects the child watching the video. What a great concept!!

Munchkin 2's Review:

She loved it!!  She loved to watch the different children eating vegetables that she already loves.  She would ask for me or Munchkin 1 to put it on for her.  She would even say, "mmmmmm".

My review:
I have mixed feelings on this product.  It is a great concept and Munchkin 2 enjoyed it which is important but I think it could have been done differently to improve its ease of access.

Lets start with the good:
I think Copy-Kids would work really well for a parent that has children who do not like to eat their vegetables.  Munchkin 2 thoroughly enjoyed the DVD and it helps her to recognize the names of the vegetables better.  They have a variety of fruits and vegetables in the chapters. 

The not as good:
The chapters are all separate on the disc so after every chapter I would have to manually click the next chapter.  There was not a way to set it to play all the chapters at once.  That was very frustrating.  I thought although they had a variety of fruits and vegetables that they could have had more problem vegetables.  For example. green beans were not one of the vegetables and that is the one I have the most problems with Munchkin 2, she like to peel them apart and only eat the seeds inside. 

The verdict:
Copy-Kids would be very effective in getting children to eat vegetables.  It has a few flaws but who doesn't.  This concept is new and I predict will only grow and get better with time.  I can't wait to see the next DVD they come out with!

Creative Bioscience African Mango Review and Giveaway

Month 1

For the last month I have been reviewing African Mango 1200 Diet from Creative Bioscience.  I thought now would be a good time to update my progress since I finished my first bottle today!  When I started using the diet I was 190lbs....ugh, I hate to see that!  I am now down to 179!

Although that may not sound like much I rounds out to about 2.5 pounds per week of weight loss!  This is incredible for me since before I started the diet the scale was going up and not down but more because I do not go out to the gym to exercise and don't put in DVDs that would only frustrate me because I cannot keep up.  The only exercise I get is my daily routine of chasing a 2 year old going to the store to  coupon, and swimming in our above ground pool with the kids and my husband.  So as you can see, I definitely do NOT go out of my way to exercise.

The diet consists of taking to African Mango Extract pills in the morning and a 1200 calorie diet.  I know that when you see the part about the 1200 calorie diet you are mortified! Ha ha.  I can relate because I was the same way at first but the more I looked at what I could and couldn't eat I relaxed a little because it is more or less the amount of food we should be eating but somehow along the way American's portion sizes have gone to the wayside.

My diet overall has not changed much, just my portion sizes.  I even still eat my nightly bowl of ice cream....well yogurt.

Month 2 & 3
The last two months were pretty uneventful.  I didn't really lose any more weight but I didn't gain any back either.  I think this was mostly my own fault because after we took the pool down I wasn't swimming everyday and throwing a Frisbee in the backyard is just not the same.  I also was not watching what I ate as much.  I never really did but I at least tried.  I think this program would work wonders for someone who stuck with it better than I did!  When I was "on top of it" and doing everything right I lost 15 pounds!  My doctor even notice and commented on how much I lost. 

Overall I would recommend The Bioscience African Mango Dietary Supplement.

Oh NO!!! My water is contaminated.....

I just received a phone call from the school district where my son attends that our local water is contaminated with E-Coli!  I cannot believe we are just finding out about it and not from the water company but from my son's school!

I am not happy right now and all the stores are out of water, I was only able to get 4 gallons for 4 people so will have to go to the next city over to get more tomorrow since they do not have the same water company.

I heard through the grapevine that this problem has existed since the 16th but they are just now telling the public about it.  I can't even find out any additional info on it because all the sites talking about it are so jammed, and the water company has NOTHING about it on their website that I can find!

We have been drinking this water, bathing in this water, and washing our clothes and dishes in this water without a clue.  There was also coliform found in the water.

I hope this problem is fixed soon!

My Review:

 I have to be honest and admit I was a little scared to use the coconut oil because I do not like coconut in general.  There are very few things where I can tolerate coconut, Girl Scout cookies being one of them (wink).  Even through my skepticism I wanted to try it and see what all the hype was about.  I was extremely impressed.  The coconut flavor was not what I expected.  It was mild and not sweet like I thought it would be and a great substitute to the oils I usually use in recipes.

The first thing I made was a Chinese dish and I will say that I replaced the full amount of oil with the coconut oil and although the rest of my family LOVED it, I thought it was heavy on the coconut.  That did not discourage me though.

I next found a recipe online for granola bars made with coconut oil and it was an "Oh, My God!" moment for me.  I couldn't help to think that was in love with this oil.  This time the amount of oil used was perfect and the flavor was mild and pleasing.  Since then I have made a number of different dishes with the coconut oil by replacing "typical" oils with the coconut oil (being careful not to overpower my coconut-sensitive palate).

Out of all the recipes I attempted with the Tropical Traditions Coconut oil my favorites were the granola bars and the Coconut Shrimp I made on a whim (I thought I had to at least attempt coconut shrimp with coconut oil).

Coconut Shrimp Recipe

Ingredients for shrimp-

1 lb. shrimp

1 cup shredded or flaked coconut  (more or less depending on taste preference)

1 c Coconut Flour

Panko bread crumbs

Salt

Pepper

Garlic powder

Onion powder

Chili powder

Cayenne pepper

2 eggs

Milk (about a cup)

Ingredients for Sauce:

Chili sauce

Sweet and sour sauce

Honey

Instructions:

1. Shell shrimp (keep tails if you wish.  I did not) and pat dry with paper towels. 
2. Sprinkle salt and pepper on shrimp and toss.  Set aside.
3. Prepare three plates are bowls with the following:

• The first will be flour with salt, pepper, garlic powder, onion powder, chili powder, and cayenne pepper.
• The second will be the eggs whisked together with about a cup of milk.
• The third will be Panko breadcrumbs mixed with the coconut (I did about half and half)

                   4.  Heat about ½ inch of coconut oil in a pan over medium heat

           5.    Dip the shrimp in the flour and shake any excess flour off. 

           6.    Then dip into the egg/milk mixture.

           7.    Coat with the panko/coconut mixture

           8.    Fry until golden brown and opaque all the way through.  Watch carefully because they  cook

                very quickly

           9.    Lay on paper towels to drain the excess oil when done.

          10.  Mix together chili sauce, sweet and sour sauce, and honey to taste.  Be careful because the

                chili sauce is very spicy.  If it gets too spicy add honey or sweet and sour.  

          11.  Enjoy.

I must apologize that I do not have exact measurements for everything in the recipe.  I tend to cook to taste and do not measure anything out most of the time.

Quick, 30 Minute Pizza Dough

This pizza dough will not win any prizes for being the "best pizza dough" but it does win my "Mommy Award" for being quick and versatile.  This dough is very basic but I like that it is because I can change it up each time, add spices and seasonings to my mood or what type of pizza I am making.  It works great for thin crust, thick crust, and deep dish pizzas!  Another thing I love about this crust is it double well and freezes well.  I like to make a double batch and freeze half of it for quick pizza lunches.  So without further adieu here is the recipe.

Quick, 30-Minute Pizza Dough

Ingredients

1 pk yeast
1 cup warm water (between 105° and 115°F)
1 TBSP oil, plus a little extra for bowl
2 1/2 cups all purpose flour

Directions

• Coat a bowl in olive oil, set aside
• mix yeast and warm water until yeast is dissolved
• stir in oil and flour until dough forms a ball
• put dough in oil coated bowl, cover with clean kitchen towel
• Place bowl on stove while preheating oven to 425°F
• Let dough rise for 15 minutes
• roll dough into desired size and shape of crust
• put on pizza pan or cookie sheet
• add toppings
• cook!! 

Tips:

• adding basil, oregano, garlic, etc can really amp up this crust.
• I like to brush the crust with a little olive oil 
• make sure your water is between 105° and 115° because if it is too hot it will kill the yeast and if it is too cool it will not activate the yeast

FunBites Review and Giveaway

The Munchkins and I were given the awesome opportunity to review FunBites Cube It cutter.  This is a product I had seen around and was curious to try so you can imagine my excitement when I was chosen to review it.

I was super excited when it came in the mail and I was finally able to try it.  Luckily for me it came right before lunchtime so after a quick wash it was off to making and cutting sandwiches. 

Munchkin 2 had developed this nasty habit of dissecting her sandwiches and eating the filling but not the bread, or licking the jelly out of the middle.  FunBites has stopped that behavior!  She now eats her sandwich without taking it apart. 

FunBites cutters so easy to use even Munchkin 2 could help me cut her sandwiches and Munchkin 1 could do it on his own.  The best part is they are great to use on much more than just sandwiches.  We were able to use it on e brownies, fruit, cheese, chicken, and so many more items.  Unfortunately I was unable to get pictures of it all because they had devoured it before I could get the camera.

I think that the Luv It cutter would be just as easy and fun to use.  I plan on buying one in addition to the FunBites Cube It cutter.

FunBites are great to get picky eaters to eat a larger variety of foods.  A big advantage is it makes foods look fun so kids are more apt to eat them.

FunBites are super easy to use; all you do is position it, press gently, and rock the cutter back and forth, then push the cut food out with the top.  So easy and quick!

The only thing I was not thrilled with is that it cut the crust off the bread but this is great for those whose kids don't like crust.  It was a simple fix though because I just cut the crust on its own or gave it to the Munchkins as is.

I also used it to quickly cut different meats to top mac and cheese for lunch when everyone wants a different meat.
