The Raw Honey that I recently got to review was no exception to this fact. I was a little thrown off by the fact that the honey was solid rather than in a squirt bottle. When I first opened the honey I gave every one a spoonful to try on its own and the opinion was unanimous......DELICIOUS!
Peanut butter and honey sandwiches is a popular sandwich in this household so honey is used on sandwiches at least 4 days a week. But I also love to substitute sugar with honey in recipes because it is better for you. Needless to say we go through quite a bit of honey in my house.
How is Raw Honey Different?
Well lets think about it...."raw" means uncooked. Most honey is pasteurized (heated to high temperatures, then cooled quickly) and then it is filtered so that it gets all lumps out and it looks clearer. This makes it look better on grocery shelves and easier to pour (or squeeze). The purpose of pasteurization is to kill the yeast cells in the honey and prevent fermentation. It also slows down the crystallization of the honey. Unfortunately when the honey is heated then run through filters much of the nutrition is destroyed. Not good. Well yes it still taste good but it is not as nutritionally good for us as raw honey.
Tropical Traditions raw honey does not go through any of these processes since it is "raw" or uncooked. And delicious. Yes, I said it again and I will probably say it a third time because it is delicious. haha. The great thing about this and all raw honeys is they are a lot like wine; they get better with age.
